Carrot Tea Bread



Contrary to the misleading title, this bread does not have tea in. It's just really good with tea.
Though, if I could find a way to make tea taste exactly like this carrot bread, my life would be forever changed and I would never have to eat carbs.

Ok that last part was obviously a lie. CARBS FOR LIFE. 




So, Michigan seems to be in a never ending state of gloomy, and it honestly has everyone in the dumps, myself included. I used to hate this time of year for this exact reason, but i've decided to just roll with it and embrace the lows just as much as the highs (emotionally and temperatureally-not a word but i made it one). 


For me, this means a little extra "treat yourself" mentality than normal. Or in other words, binge watching the office, reading an awesome new book, and having a few (5) extra slices of this delicious carrot bread at the end of the day. 


Does anyone else believe baked goods that have carrots in them are a healthy snack? Because I seriously do. Carrot cake? Basically a salad. Carrot cupcake with cream cheese frosting? Definitely the same as a kale smoothie. This carrot bread? Kind of like lemon water.  


Make this. For your health.

Ingredients: 
3 eggs
1 1/2 c sugar 
3/4 c veg. oil
2 3/4 c flour
1 3/4 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 1/2 tsp cinnamon
1 1/2 c finely shredded carrots 
Powdered sugar for dusting (optional) 
Directions: 
Grease a loaf pan. In a large bowl, beat eggs, sugar, and oil until combined. In a small bowl, Sift flour, baking powder, baking soda, salt, and cinnamon. Stir the dry mixture into the wet mixture. Stir in carrots. Turn the mixture into the prepared pan. Bake at 325F for 1 hour and 20 minutes, or until the center springs back when lightly pressed. Cool the loaf completely before turning it out of the pan, and sprinkle the top with powdered sugar if desired.
