Ricotta Pound Cake


1 + 1/2 cups all purpose flour
2 tsp baking baking powder
1 tsp salt
1 + 2/3 cups granulated sugar
1 tsp vanilla extract
3 large eggs
3/4 cup butter
1 + 1/2 cups whole milk ricotta


Preheat oven to 350F and grease a 9 inch loaf pan with butter. Cream together ricotta, sugar, and butter until smooth. Add in the eggs and vanilla. Sift together the flour, baking powder, and salt. Add to the ricotta mixture. Pour into the pan and place in the oven for about 50 minutes or until a toothpick comes out clean.
